About the Distillery
Years ago, the founders of KAIKATSU Whisky, in pursuit of a perfect whisky flavor, travelled to every corner of Japan. Finally, they discovered DEWA Distillery in a tranquil valley of Yamagata Prefecture, the ideal place they had in mind—a place with a maritime climate, moist air, and the wisdom of generations of farming, which was exactly the brewing environment they had been dreaming of. The birth of every drop of KAIKATSU Whisky carries the unique craftsmanship of DEWA Distillery and the pure breeze of Yamagata. From the germination of barley to the meticulous management of mashing, and then to the precise operation of the patented pot stills, every process is dedicated to the pursuit of ultimate quality. Especially the unique "barrel" supply, which perfectly combines the moistness of the sea with the spirit of Yamagata, endows the whisky with a distinctive richness and roundness. In this sense, the product of KAIKATSU is more than a whisky brand; it is a tribute to the natural gifts and the ancient craftsmanship of Yamagata. With every sip, you hear the echoes of time, and with every bottle, you hold the essence of Yamagata. The symbol of Japanese Whisky is the “Mizunara oak cask”. Whisky matured in Mizunara casks has a unique aroma of agarwood and sandalwood, coupled with honey like sweetness. This is the origin of the "Oriental Zen fragrance" in Japanese Whisky.
